Qdoba White Rice Recipe

Qdoba white rice is a simple yet flavorful dish made with long-grain white rice, fresh lime juice, cilantro, salt, and a touch of oil. It’s light, fluffy, and perfectly balanced with zesty and savory flavors, making it a great base for burritos, bowls, and more.

Ingredients
  

  • 1 cup white rice Jasmine rice recommended, but any white rice works
  • ½ lime juiced
  • cup fresh cilantro chopped
  • Pinch of salt

Method
 

  1. Rinse the rice under cold water until the water runs clear. This removes excess starch and prevents stickiness. In a medium saucepan, add 1 cup of white rice and 2 cups of water. Bring to a boil, then reduce heat to low. Cover and let simmer for 10-15 minutes, or until the water is absorbed.Once done, remove from heat and let it sit, covered, for 5 minutes to fluff up.
  2. Transfer the hot rice to a mixing bowl. Squeeze in the juice of half a lime and stir well. The citrusy aroma will start to release! Add ⅛ cup of chopped cilantro and a pinch of salt. Gently stir everything together until evenly combined.
  3. Plate the rice in a serving bowl (a black guacamole dish works great for presentation!). Garnish with extra lime wedges and a sprinkle of fresh cilantro. Serve warm and enjoy with grilled chicken, fish, tacos, or your favorite Mexican dishes!

Notes

Store any leftover rice in an airtight container in the fridge for up to 3 days. Reheat in the microwave with a splash of water to keep it moist.
